French Onion Soup 法式洋蔥湯
It's my first time to make French Onion Soup. :)) Very successful! haha
Of course, it could be better :))) I think I have put too much cheese haha (although i'm a cheese-lover) and the cheese can be more brown. :))
- 2 large onions, peeled and thinly sliced.
- Olive oil
- sugar (optional)
- 1 cloves garlic, minced
- 2 2/3 cups of beef stock
- 1/6 cup of dry white wine
- 1/2 bay leaf
- dry thyme
- Salt and pepper
- 2 slices of toasted French bread
- 1/2 cups of grated Swiss Gruyere with a little grated Parmesan

1. Frist, you have to caramelize onions.
Sauté the onions in the olive oil on medium high heat until well browned, for 40min to 1hr. (Stir occasionally). You may add the sugar after first 10 minutes into the process to help with the carmelization. (I put less than 1/2 teaspoon, but it is optional)
2. Then, add garlic and sauté for 1 minute. Add the stock, wine, bay leaf, and thyme. Bring it to simmer for 30 minutes.
3. Finally, cover with the toast and sprinkle with cheese. Put into the broiler for 10 minutes at 350 degrees F, or until the cheese bubbles and is slightly browned.
It is the serving for 2. :)
